The interface is part of the answer: an emulation mode is selected on the device or by a prefix in the stream, so how you reach the printer decides how you switch it.

Not necessarily. cab's mode covers the subset of ZPL that cab chose, so fonts, barcode types and graphics are the usual places where output differs. Send one real label to the device and compare before you migrate a fleet.
